Why dollars.
The two coins are priced in different assets, SOL and ETH, that move against each other all day. The maker compares them in dollars, so a move in the rate alone can open a gap, and the maker closes it like any other.

pump.fun quotes in SOL, Pons in ETH. A 10 % fall in SOL makes the pump.fun side 10 % cheaper in dollars with no trade at all.
Two sets of fees
pump.fun takes 1.25 % in total, Pons 1 % plus the creator tax. The band is wider than a round trip across both.
